Our head chef, Peter Clifford, has been working in top end restaurants from a very young age, starting in his parents’ restaurant, under his father, the Michelin star chef, Michael Clifford. From here he has went on to work in some of the most highly acclaimed restaurants across Britain and Ireland, including Restaurant Gordon Ramsay, 15 by Jamie Oliver, Tom Aikens and Ireland’s only two Michelin star, Restaurant Patrick Guilbaud. Before joining the Market Bar team, Peter’s most recent endeavour was in the world class Ballyfin Demesne hotel, as Sous chef to the renowned chef Fred Cordonnier. Peter has also won many cookery competitions and written several recipe columns for local and national publications.
Here at the Market Bar, Peter aims to serve reasonably priced food using fresh, local ingredients in a relaxed environment. As he says himself “I’m going to let the food speak for itself; I want to put the Market Bar on the culinary map of Ireland”. When it comes to food, Peter lives by one simple rule of the great Escoffier, “Faites Simple”, which he understands to mean, make it simple and use the very best ingredients you can get of their kind.
Peter grew up in the centre of the restaurant industry and is known by respected food critics, who have seen his talent and food knowledge, expand and develop. He has brought his expertise here to the Market Bar, and we hope that you enjoy the culinary experience we have to offer.
